Growing up I remember my Mom making Cracker Jack Crunch for the Holidays. The kids and I decided to make it this year. We made a big batch to give out to friends and family.

1. Pop 6 quarts of popcorn and be sure you pick out all the unpopped kernels. (I learned this the hard way years ago.)
2. Mix popcorn, a jar of unsalted peanuts, a box of captain crunch and rice chex cereal together in a large bowl.
3. Melt one cup margarine (I used butter) and then add 2 cups firm brown sugar, 1 cup of corn syrup, 1 tsp salt and 1/2 teaspoon baking soda. Stir constantly and bring to a boil for 5 minutes in a non stick pan. Remove from heat and add 1/2 tsp vanilla.
4. Stir liquid mixture into cereal mix.5. Bake in oven on 250 degrees for 1 hour tossing ever 15 minutes.
We had a wonderful Christmas this year. Some of the highlights include Paisley playing Christmas songs on her keyboard,
opening gifts from each other,
getting gifts that you asked for,
watching loved ones receive gifts they asked for,
and being with family!
